250 grams of flour
4 tablespoons powdered sugar
4 egg yolk
120 grams of butter
2 teaspoons baking powder
6 egg whites
1 lemon (rind)
200 grams of powdered sugar
1 teaspoon vinegar
Mix the egg yolk with the butter and sugar until frothy. The flour is mixed with the baking powder and added to the whipped butter. Mix dough out of it. It’s a heavier dough, but so good.
Preheat the oven to 350f dgrees.
The dough is pressed into a buttered baking sheet with wet hands. Put in the oven and bake for almost 20 minutes.
While the dough is baking, beat the foam. Grate a lemon peel and crumble with a little sugar in a mortar. Add the crumbs along with the sugar to the egg whites, a few drops of vinegar can go into it. We start to beat it, and when it is almost good, we add the remaining sugar and we beat it ready.
We take the dough out of the oven, smear it thinly with apricot jam, and then cover it with the foam, which we creatively arrange on top. It takes about 10 more minutes in the oven until the egg foam gets a pale brown color. Then you're done. Gradually accustom the foam to the outdoor climate, wait for it to cool.
