Hungarian Yellow Wax Bean 

  • 1 pound fresh trimmed yellow wax beans (ends removed and cut into 2-inch pieces)

  • 6 cups water

  • 1 teaspoon salt 

  • 1/2 teaspoon pepper

  • 1/2 teaspoon  sweet Hungarian paprika (plus additional for sprinkling)

  • 1 cup sour cream

 

Add salt to the water and bring water to a boil, add the yellow wax beans, allowing them to simmer until soft. This will take about 8-10 minutes. Remove from heat and allow the beans to begin cooling in the liquid. Do not drain.
