Veggy Muffins

  • Vegetable: any combination of tomatoes, mushroom,  zucchini, broccoli, etc

  • Cheese: any combination of mozzarella, feta, parmesan, cheddar, etc.

  • 5 eggs

  • salt

  • pepper

  • oil spray

Heat oven to 350f

Spray or brush oil a muffin baking pan

Cut all vegetables to small cubes, mix with shredded or cut cheeses

Fill the muffin tin to the top.

Mix eggs with salt and pepper and pour over the vegetables to the top

note: you may add some heavy cream to the eggs, mix well.
