Tuscan White Beans Dip

2 (15 oz.) cans great northern white beans

¼ cup minced shallots

1½ tablespoon garlic, chopped

3 tablespoons fresh lemon juice

½ teaspoon salt

2½ teaspoons dried thyme

1½ dried rosemary, crushed

3 tablespoons olive oil

 

1  thin loaf of crusty bread, cut into 1/4" slices

6 small Roma tomatoes, halved lengthwise

fresh thyme and rosemary for garnish

 

Rinse beans and pat dry

In a food processor blend all ingredients except bread and tomatoes to a smooth paste

Garnish with fresh thyme and rosemary

Serve with bread
