Turos Delkli

Dough:

4 3/4 cups (600 g) of flour,

1½ cups (320-350 ml) of warm milk

1 heaping tablespoon of instant yeast

1 egg

3 tablespoons of granulated sugar

2½ ounces (80 g, 5 teaspoons) of melted butter

a pinch of salt.

 

Filling:

1.2 pounds (500-600 g) of unsalted pressed dry cottage cheese or farmer’s cheese

2 tablespoons of semolina #2

4-5 heaping tablespoons of granulated sugar

2 egg yolks

2 beaten egg whites

2 small packets of vanilla sugar (18g)

the zest of two lemons

raisins as you'd like

 

1 egg for brushing the dough

Dough:

Combine the lukewarm milk with the sugar, yeast, butter, egg, and pour into the mixing bowl. Add the flour and salt and start your mixer on a low speed. Let the standing mixer knead the dough for approximately 5-8 minutes. We need to get a medium-soft, but very silky dough. Leave the dough in the bowl, sprinkle with flour, cover with a kitchen towel and let it rise until it at least doubles in size (1-2 hours).

 

Filling:

Mix cottage cheese, semolina, sugar, vanilla sugar, lemon zest, raisins and the egg yolk in a bowl. Beat the egg whites until firm peaks form, then gently fold into the cottage cheese. You should have a creamy, but not too runny texture. Roll the dough out with a rolling pin to about â…› inch (4 mm) thick and cut into 4x4-inch (10x10 cm) squares. Put a tablespoon of filling on each one, pinch all four corners together, and give them a twist to seal the bundles. Place them on a lined baking tray, cover with a cloth, and let the bundles rest for 20 minutes. While you are waiting for the bundles to rise, preheat the oven to 350- 355 °F (170-180 °C).

Once the dough has risen, lightly glaze each bundle with beaten egg, and bake in the oven for approximately 20 minutes. Allow them to cool down on a wire rack, then sprinkle with some powdered sugar.
