Salmon Sweet and Sour
2 cups Tomato Juice
2 cups Water
3 Carrots, sliced
2 Onions, sliced
3/4 cup Red wine
1/4 cup Lemon Juice
1 cups Sugar
1 Tbl Pickling Spice (clover, bay leaves, peppercorn)
Fillet of Salmon
Bring to boil the first four ing.
Add the next four ing. and bring to boil again.
Cook the salmon in this brine for about 10 minutes.
Note: good substitute for holiday's gefilte fish
