Potato Paprikas
Krumpli Paprikas

1 large onion, chopped

6 chicken pieces (any part)*

1 red peppers, narrow strips

1 large tomato, peeled and diced

2 teaspoon salt (divided)

1.5 teaspoon pepper (divided)

4 teaspoons sweet paprika (divided)

1/4 cup vegetable oil

6 medium potatoes, peeled and cut length wise (like home fries)

water to cover

* I like to remove the skin but it is ok to leave it.

On medium heat, sauté onions in the oil until translucent, about 5 minutes.

Arrange the chicken pieces in one layer over the onions, top side up.

Top with the red peppers and tomatoes.

Sprinkle with 1 teaspoon salt, 1 teaspoon pepper, and 2 teaspoons paprika.

After about 5 minutes, turn the chicken top-side down, make sure everything is covered with the spices.

Do not add any water at this point!

Cover the pan and continue to simmer on low heat for about 25 minutes.

Check every 10 minutes, to make sure there is a little liquid in the pan. Usually, it is not needed but sometimes you may need to add a little bit of water. 

Top the chicken with the potatoes. cover with the rest of the spices. 
Push the potatoes between the chicken pieces, add water to cover.

Continue to simmer about 20 minutes till potatoes are done.
If needed, cook a bit further till most of the liquid is gone.

Note, this is often done with kielbasa or Chorizo type sausage or hotdogs
