Phylo Baskets

Baskets:

3    Filo dough sheets

4    tablespoons melted butter

 

Filling:

4    tablespoons melted butter

1    small red onion, sliced thin

1    lb. small mushrooms, quartered

¼   cup balsamic vinegar

1    tablespoon sugar

salt

pepper

camembert cheese, sliced ¼" thin

fresh thyme or chives for garnish

 

Baskets:

Brush melted butter between filo sheets, cut to 12 squares.

Use the squares to line individually 12 holes of a muffin pan.

Bake till golden, about 8 minutes.

 

Filling:

Sauté onions in melted butter about 5 minutes.

Add mushrooms, balsamic, salt, and pepper.

Continue to cook till all liquid evaporated.

 

Divide the mushroom to fill the baskets with the mushrooms.

Cover with a piece of cheese.

Bake for 2-4 minutes.

Decorate with thyme or chives.
