Pepper and Onion Stew

1/3 cup of oil

4-5 peppers all colors

1 large onion

1 can of cannellini beans

salt

pepper

paprika

 

Cut onions to larger squares (about 3/4")

Cut peppers to larger squares (about 3/4")

Saute onions in the oil till golden brown.

Add peppers, salt, pepper, paprika, and a few tablespoons of water.

Continue to saute, mixing often for about 10 minutes.

Mix in the beans, continue to saute for another 10-15 minutes.

Note: May replaced the beans with potatoes or rice.
