Peach Cobbler
Filling:
6 medium peaches, pitted and cut into wedges (or 2-3 cans of peaches, without the juice)
1/2 cup sugar
2 tbl flour
1 tbls. lemon juice
1/2 teas. vanilla extract
1/4 teas almond extract
1 tbl. cinnamon
1/4 teas salt
2 tbl butter
Batter:
1/2 cup flour
1/2 cup sugar
1/2 teas baking powder
1/4 teas salt
2 tbl butter, soft
1 egg
Make Filling:
In a medium bowl, combine peaches; sugar, flour, lemon juice, vanilla and almond extracts, cinnamon and water.
Turn into 8-by-8-by-2-inch baking dish. Dot with 2 tablespoons butter.
Preheat oven to 375F.

Make Batter:
In medium bowl, combine all batter ingredients;
beat with wooden spoon until smooth. Drop in 9 portions over filling, spacing evenly. (Batter will spread during baking.)
Bake 35 to 40 minutes, or until peaches are tender and crust is golden. Serve warm, with cream or vanilla ice cream.
Makes 9 servings.
