Meatballs

3 slices white bread (stale is fine) (I use 3/4 cups breadcrumbs instead)
1/3 cup milk
1 pound ground pork or veal or chicken or turkey
1 pound ground beef
1/2 cup finely chopped onion
1 1/4 cups finely grated Parmesan, preferably Parmigiano-Reggiano
1/4 cup chopped parsley
2 garlic cloves, finely chopped
1 tablespoon kosher salt
1 teaspoon black pepper

5 cups Simple Tomato Sauce
 

combine well first 11 ingredients.

Form small balls (I use a small ice cream scoop)

place on a lined cookie sheet

bake in 350f for about 25 minutes

place tomato sauce in a pan, add baked meatballs

cook for about 30 minutes.

freezes well

yields 60 small meatballs
