 Lamb Loin Chops

2 lb lamb loin chops (1.5" thick)

4 clove garlic, minced

1 tablespoon rosemary, chopped

1.25 teaspoon kosher salt

1 teaspoon black pepper

zest from 1 lemon

1/4 cup olive oil

combine all ingredients except the chops.

cover the chops with the marinade and keep refrigerated for at least 1 hour or overnight.

on a medium-high grill, sear each side for 2-3 minutes, then lower the heat to medium and grill for additional 5-6 minutes or till internal temperature is 150F.

Allow to rest, covered for 5 minutes
