Jam and Egg White Squares
140 gram soft butter
7 egg eggs, separated
140 gram sugar
140 gram flour
1 teaspoon baking powder
Mix butter to a froth with egg yolks and sugar, then add flour mixed with a teaspoon of baking powder.
Butter a baking sheet, flour and place the dough. It’s a fairly dense dough, not flowing, so you need to help spread it on the baking sheet with a spatula or knife. Otherwise, it spreads nicely under the influence of heat.
Bake in the oven almost ready. While baking, beat the egg whites to a rock hardness with sugar.
Take it out of the oven, smear it richly with peach jam top with the egg whites, then put it back in the oven for 5-6 minutes until the top gets a nice color.
