2 lb beef, cut 2" cubes

2 onions, cut to 1" cubes

3-4 large sweet red peppers, cut to 1/2" cubes

2 carrots, cut 1/2" slices

1 lb okra

1 lb green beans

3 eggplants, cut to 1 in. cubes

3 tomatoes cut to large chunks

2 lb potatoes, peeled, quartered and cut to thick slices

vegetable oil

1/2 can tomato paste

1 bunch parsley

Salt to taste

Saute Okra in some oil, until light brown. It will reduce the slimy liquid.

 

Brown the meat in a frying pan for about 10 minutes.

 

Mix all ing. and arrange in a well-oiled baking pan.

 

Mix tomato paste with water, pour over all ingredients.

 

Cover with aluminum foil, and bake in 400°f (200°C) oven for about 1 hour.

 

Sprinkle with finely chopped parsley and serve.
