Green Bean in Lemon Vinegrette

1 lb Green Beans, trimmed

Juice of 1/2 Lemon

Salt

Pepper

2 teas french Mustard

3 Tbl Olive Oil

 

Toasted Macademia or Pinenuts for decoration.

Drop bean in rapidly boiling water. Simmer for 5 minutes.

Drain and rinse in cold water. Pile in a colander and set aside.

In a bowl, whisk the other ing. adding little oil at a time.

Arrange beans on a shallow dish, and pour the dressing over them.

 

Toast macadamia or pinenuts w/o any oil, stirring constantly.

Serve at once.
