Goat Cheese Torte

1      lb. cream cheese

1.5   lb. goat cheese

12    oz. butter

1      cup pesto

1      cup dry tomatoes, chopped

spray oil to coat pan

 

Mix 2 cheeses and butter in a food processor.

Spray a round baking dish with oil to coat.

Layer 1/3 of the cheese mix, followed by 1/2 of the pesto, repeat with another 1/3 of cheese and 1/2 of pesto. finish with the last 1/3 of the cheese.

Arrange sun dry tomatoes on top.

Cover with stretch paper and refrigerate for a few hour or overnight.

to serve: turn onto one plate, then to another one to get the tomatoes on top,

decorate with fresh basil leaves.
