Gizzards Porkolt

  1. For the gizzard stew , peel the gizzards, then cut them in half at the thin part. When we are done with this, wash it and let it drain. 

  2. For the stew, peel and chop the vegetables and dice the bacon.

  3. Fry the bacon in a little fat, then when it is golden brown, add the onion. When the onion becomes glassy, ​​add the salt, pepper, ground cumin, tomatoes, paprika, and after 4-5 minutes, the gizzard.

  4. Fry the gizzard a little, then add salt and pepper. After it has turned white, pour a little water over it, then sprinkle with hot, smoked and sweet paprika. 

  5. Cover and cook over medium heat for 1.5-2 hours, stirring occasionally and adding water if necessary. About 15 minutes before the end, add the garlic. Serve with Israeli couscous.
