Fennel Salad

3 fennels, very thinly sliced

1/2 red onion, very thinly sliced

lemon juice

salt

pepper

fresh oregano

asiago cheese shavings

black and green olives

 

Radish, thinly sliced (optional)

walnut pieces (optional)

generously, sprinkle slices of fennel with lemon juice and let stand for a few hours (even overnight). 

Add onions.

Just before serving add oregano and olives,

top with asiago shavings.
