Heat convection oven to 400f (450f in regular oven)​

Place all ingredients in a bowl.

Transfer eggplants slices to a cookie sheet.

Bake for 30 minutes.

Remove from oven, brush the slices with oil.

Place back in the cookie sheet, facing the other side up. Brush with oil and bake additional 20 minutes.

If not baked enough (see picture for color) continue to bake anoter 10--15 minutes
