Eggplant Slices, Baked
3-4 eggplants, sliced to thick slices
3 Tablespoons + 1/4 cup oil
1.5 teaspoons salt
2 cups water

Heat convection oven to 400f (450f in regular oven)​.
Place all ingredients in a bowl.
No need to soak but make sure each slice got wet.
Transfer eggplant slices to a cookie sheet.
Bake for 30 minutes.
Remove from oven, turn the slices to the other side, spray with a tiny bit of oil or slightly brush the slices with oil.
Bake additional 20 minutes.
If not baked enough (see picture for color) continue to bake another 10--15 minutes.
