Eggplant Stuffed w/ Ground Beef

5 medium size eggplants

for stuffing:

1 lb ground beef

1 large onion

1 red pepper

1 teaspoon sweet paprika

1/2 teaspoon pepper

1 teaspoon salt

1 teaspoon cinnamon

2 tablespoon oil

​

for the sauce:

2 medium onions

1 red pepper

2 tomatoes, diced

4 tablespoons tomato paste

1 teaspoon sweet paprika

1/2 teaspoon pepper

2 teaspoons salt

2 cups boiling water​​

Turn oven to 400f

Wash and pat dry the eggplants

Place on a cookie sheet and bake for 1/2 an hour.

Remove from oven and set aside to cool

the stuffing:​

Dice the onion and red pepper.

Add 2 tablespoons of oil to a large pan, add the onions, after 1 minute add the red pepper, sauté for about 3 minutes.

add the rest of the stuffing ingredients and sauté for additional 2 minutes

Add ground beef and continue to sauté until getting dark.

Let to cool

Sauce:

In the same pan, sauté all the sauce ingredients

Sauté for 5 minutes, add water and simmer for a few minutes

​

Assemble:

Peel the eggplants gingerly to make they stay whole.

Cut in half, vertically

Place on a baking dish and fill with the stuffing generously.

Pour the sauce over the eggplants and bake in 400f for 40 minutes
