Slice eggplants horizontally to 3/4" slices

Brush both sides with olive oil

Heat the grill to very high and grill for about 3-5 minutes without moving, till nice grill marks are formed.

Turn to another side, repeating the process.

 

If does not look cooked inside, turn off the grill, close cover and leave for a few minutes.

 

This also can be done in the oven under the broiler, or bake in 375F oven till golden on both sides, turn off the oven and leave inside for 30 minutes.
