Baked Zucchini

3    green zucchinis

1     cup finely grounded Parmesan cheese

½    teaspoon dried Thyme

1     clove Garlic crushed

2     tablespoons Olive Oil



Wash and trim zucchini.

Cut to about ¾” round slices

In a bowl, mix all other ingredients

Add zucchini and toss so all slices will be covered with the cheese mix.


Arrange in one layer, on a baking sheet covered with Silpat*

Bake at 3500 for 17-20 minutes.

Serve immediately.


You may use oiled foil, but they do not slide out as when using Silpat
