Dough:
1 kg (8 cups) flour
50 gr yeast (2.5 TBL)
2 cups milk
pinch of salt
2 eggs
200 gr butter (15 TBL)
6 TBL sugar
Filling:
butter to spread on the rolled dough
1/2 kg (1 lb) farmer cheese
2 eggs
¼ cup sugar
Dough:
place yeast, a pinch of flour, and a pinch of sugar in a small bowl add lukewarm milk. Let rise for about 7-10 minutes.
Place the rest of the dough ingredient in a mixing bowl, add proofed yeast.
Mix to a smooth dough.
Let rise for about an hour.
Punch down and let rise again for about 1/2 an hour.
Roll out dough, not very thin. Spread butter generously. Cut to 3” squares.
Filling:
combine filling ingredients place a TBL of cheese in the middle of each square.
Fold
Let rise for 30 minutes
Brush with eggwash
Bake in 350f for 20 minutes
