Thai Chicken Salad

1.5 Lb. Grilled Chicken Breast, cut to stripes

2 Cucumbers

1/4 Lb. Snow Peas

1/2 Cup Roasted Peanuts, chopped

1/2 Lb. Bean Sprouts

2 Red Peppers

2 Cups Red Cabbage, Shredded

3 Green Onions, cut

1/3 cups Roasted Peanuts, chopped

1/2 Cup Rice Vinegar

1/3 Cup Corn Oil

1 Teas Salt

1 Tbl Sugar

2 Tbl Lime Juice

3/4 Tbl Garlic, chopped

1/2 Tbl Soy Sauce

1 Teas Ginger Powder 

 

Grill Chicken and slice.

Cover snow peas with hot water for a few minutes.

In layers, place on a shallow dish: Red cabbage, topped with all other salad ing.

Mix dressing and pour over vegetables
