Cheesy Zucchini Bread Sticks

For the Breadsticks

  • 2 cups grated zucchini Squeeze out excess liquid for a crispier texture.

  • 1 cup mozzarella cheese May substitute with provolone or fontina.

  • 1/2 cup parmesan cheese For a dairy-free option, consider using nutritional yeast.

  • 1 large egg Replace with a flax or chia egg for vegan version.

  • 1 teaspoon garlic parsley salt Or use garlic powder and Italian seasoning to taste.

For Topping

  • 1 cup grated cheese of choice Optional; adds richness and a beautiful golden finish.

 

  1. Preheat your oven to 425°F (220°C).

  2. Grate the zucchini and squeeze out as much moisture as possible.

  3. In a large mixing bowl, combine the grated zucchini, mozzarella cheese, parmesan cheese, egg, and garlic parsley salt.

  4. Transfer the mixture to a baking sheet and spread it evenly to about half an inch thick.

  5. Bake for 15 minutes until edges start to crisp.

  6. Remove from the oven and sprinkle grated cheese on top. Bake for an additional 2 to 5 minutes until cheese melts.

  7. Cool for a minute and slice into strips. Serve immediately.
