Mile High Cheese Cake

Dough:

100 gram butter, soft

1/4 cup sugar

1/8 teaspoon salt

1 teaspoon Vanilla

1.5 cups flour

Filling:

500 gram combination of farmer cheese and 5% Fage

1.5 cup sour cream

1.25 cup sugar

2 teaspoon vanilla sugar

dash of salt

1 teaspoon vanilla

zest from 1 lemon

7 eggs 

1 cup milk

3 tablespoon corn starch

3/4 cup flour

1/2 cup vanilla pudding (60 gram)

Egg whites:

whip 7 egg white

Dough:

Make a daugh from the first 5 ingredients and spread in large springform baking pan. Push with hands to make sure it is spread evenly.

Refrigerate for 15 minutes, then bake in 300F 7-10 minutes.

remove from over, spray oil on the pan's edges. line with parchment paper higher than the edge of the pan

combine all filling ingredients.

 

Fold whipped egg white and to the rest of the filling ingredients.

pour into the pan and put a strip of aluminum foil around the springform pan. That will keep the side of the cake white.

Bake in 420f oven for about 10 minutes till the cheese get a golden color.

remove from oven, slide a knife along the edge between the paper and the cake.

Reduce oven heat to 300f and continue baking about 60-75 minutes.

If the cake raise too much, remove from oven for 5 minutes, then return to oven and continue baking. This may happen 2-3 times.

Remove from oven and refrigerate so it will settle.
