Roasted Cauliflower

and/or Broccoli

1 head of medium cauliflower or 3 large broccoli spears

2 eggs

1/2 cup bread crumbs

1/2 cup parmesan cheese

1/8 cup olive oil

salt

pepper

 

Note: quantities for other than the vegetables are for either cauliflower or broccoli. If using both, double the other ingredients

Separate a whole cauliflower to medium size flowerets. wash well.

If using broccoli, separate to medium size florets.

 

With a fork, whip up 2 whole eggs, add salt, pepper and olive oil. mix well, add the vegetable sections.

Top with bread crumbs.

Combine to cover the vegetables.

 

Bake in the air fryer for 20 minutes.
