Cabbage and Beet Soup

2 large Raw Beets, shredded

1 small Green Cabbage, thinly sliced

1 small Onion, chopped

1 teaspoon salt

1/2 teaspoon pepper

water to cover + 4 cups (or beef, chicken or vegetable stock)

sour cream for garnish

 

this version is vegetarian optionally, I add meat cubes or oxtail bones   

 

 

Place all ingredients in a soup pot, bring to boil.

Reduce heat and continue to simmer about 1 hour.
