Butternut, Radicchio,and Boursin Salad

2 tablespoon chive, chopped

2 tablespoon parsley, chopped

2 boxes garlic fine herbs boursin cheese

1 cup walnuts

1.5 lb butternut squash

3 tablespoons olive oil +

1/2 cup olice oil

1/2 teaspoon salt

1/2 teaspoon pepper


1/4 cup sherry vinegar

1/2 teaspoon honey

2 tablespoon mustard

1 head redicchio 

Note: I replaced the radicchio with red cabbage

preheat oven to 350f and bake walnuts for 8 minutes

combine chives and parsley, put on a plate,

cut boursin to cubes and roll in the chive and parsley mix to coat.

turn oven up to 425f, place cubes of butternut squash, sprinkle with salt and pepper. bake 16-18 minutes, till soften.

in a large bowl, wisk the dressing ingreduents.

set aside 1/4 cup of the dressing, add radicchio to the dressing in the large bowl and mix.

spread half of the radicchio on a serving platter

layer, squash, radichio and boursin

drizle with rest of the dressing.
