First, slice off the hardened bottom stem and remove any tough outer leaves. Toss them with olive oil, salt and pepper to taste. Roast 400F oven until brown, at least 15 minutes. 

Note:

Optionally, could be cut in half before seasoning.

Works well in an air fryer
