Stuffed Artichoke Bottoms

7 Artichoke Bottoms (fresh, canned or frozen)

 

for filling:

1/2 Lb cooked Meat (beef, chicken or tureky)

2 Tbl Mayonnaise

2 Tbl Olives, pitted, chopped (or chopped capers)

1 teas Soy Sauce

1 teas Green Onion, diced, white part only

2 Tbl roasted Pinenuts

Salt

White Pepper

 

for decoration:

Lettuce

Walnuts

Cherry tomatoes

Dill


Prepare Artichoke bottoms (extract from fresh artichoke or drain if using canned)

Dice meat and mix with other filling ings.

Salt and Pepper to taste
