Zucchini Pie

dough:

use any pie crust

Filling:

1 cup Heavy cream

2 eggs

4 large yellow zucchini

4 large green zucchini

1 cup shredded cheese

2 tablespoons flour

1 teaspoon salt

1/4 teaspoon pepper

1 tablespoon fresh thyme

Tart baking pan

Spray with oil the tart pan

place the dough in the pan

with a fork make a few holes in the dough

Mix all filling ingredients except the zucchinis and pour half of the filling on the dough

slice the zucchini, lengthwise, very  thin with a vegetable peeler or a mandoline and arrange it as in the Video 

 

Top with the other half of filling

Bake in 350f for 45 minutes.

let cool a bit before serving

Note: I made it w/o the crust

I used a 10" (25 sm) tart pan
