Baked Roasted Peppers
6 Roasted red pepper
2 eggs
Feta cheese
-roast red peppers
-combine the eggs with feta cheese
-stuff the peppers with the cheese/egg mixture
-spray a baking pan with oil
-place the stuffed peppers in the baking pan close to each other, in several layers
-on top spread any leftover egg/cheese mixture
-bake in 3500 for 45 minutes

(*) This recipe I got from Julie, Yossi’s Father’s sister; she lived in Sofia Bulgaria w/husband Moise. We visited them in 1995.
Their 3 children, married with children still live in Bulgaria. One granddaughter immigrated to Israel
