Leek and Ground Beef Patties
4 lb leeks
1 onion, diced
1 lb ground beef
2 eggs
1/2 cup bread crumbs
salt
pepper
1 egg white
oil for frying
Use the white part of the leeks only.
Wash well, slice and boil in salted water till soft.
Process in a food processor.
Add rest of ingredients and mix well.
With a fork, whip the egg white, lightly.
Form patties, dip in the egg white and fry a few minutes on each side.
Serve warm.
