Hungarian Cheese Dumplings
1 lb. farmer cheese
4 Tablespoons farina
1.5 Tablespoons sugar
4 Tablespoons butter
1/2 cup bread crumbs
6 cups water
1/2 teas. salt
sugar and/or sour cream to garnish
Separate the eggs, combine the yolks, sugar, farmer cheese and farina.
Refrigerate for about an hour.
Whip egg whites till firm, combine gently with cheese mixture and continue to refrigerate for another hour.
Bring to boil water with salt in a large pot.
Form small balls, gently drop in boiling water and cook till they float to the surface, about 5-8 minutes.
Lift them out of the water with a slotted spoon (test one before taking them all out of the water).
In a frying pan, melt the butter and sauté bread crumbs till golden brown.
Roll the cheese ball in the bread crumbs.
serve with sugar and sour cream to taste
