Baked Goat Cheese and Red Pepper

dough:

1      lb. flour

3      teaspoon dry yeast

1      tablespoon sugar

1¼    cup water

2     teaspoons salt

 

filling:

4     large red peppers

½    cup olive oil

4     cloves garlic

2     teaspoons fresh thyme

½    lb. goat cheese

¼    black Kalamata olives, pitted

salt

pepper

 

place yeast, ¼ cup lukewarm water and a dash of sugar in small bowl, for about 10 minutes, till yeast proofs.

mix all dough ing. in a food processor till you have a smooth dough.

cover dough and let rise 1.5 hour.

cut the peppers to 1/2" strips.

in a pan, sauté peppers, thyme, garlic and olive oil till peppers soften, about 10 minutes add salt and pepper.

roll out dough to ½” and place in baking pan

cover dough with layers of slices of goat cheese, the sautéed peppers olives and sprinkle with olives oil

bake in 350F for ½ an hour. serve warm
