Date, Walnut Passover Cake
Eggs, separated
2.5 cups Sugar
1 Orange, juice and grated peel
1 Lemon, juice and grated peel
1/2 cup Matzo meal
20 Dates, slice, Pitts removed
2/3 cup Ground Walnut
1/2 teas. Cinnamon
Mix egg yolks with sugar.
Add juices and peels.
Add all other ing.
In a separate bowl, whip egg whites until stiff peak form.
Slowly fold into the yolk mixture.
Spray with oil a 9x13 pan. Line with wax paper and spray again.
Pour cake mixture.
Bake in 350 degree for about 1 hour
