Double Treasure Chocolate Cookies

1    12 oz (2 cups) package chocolate chips (semi-sweet preferred),

1/2  cup butter 

3/4  cup sugar

2  eggs

1  teaspoon vanilla

2  cups oats ( Quick or Rolled Old Fashioned.)

1 1/2 cups flour

2  teaspoons baking powder

1/4 teaspoon salt

1/2  cup powder sugar

Heat oven to 350.

Melt 1 cup of chocolate chips in a double broiler. (if melting in microwave add 1/4 cup water) cool slightly.

Beat together butter & sugar until light and fluffy.

Blend in eggs, vanilla and melted chocolate.

Add combined dry ingredients, not including powder sugar.

Stir in remaining chocolate chips.

Shape into 1-inch balls and roll in powered sugar, coating heavily.

Place on ungreased cookie sheet.

Bake 10 minutes. Do not over-bake.

Cool on wire rack.

 

 

Makes about 5 dozen…..well of course not, I think I made about 3 dozen out of this recipe yesterday.
