Nurit's Cake


6 Eggs

1/2 teas. Lemon Juice

6 Tbl. Sugar

6 Tbl. Flour


1 Cup Water

1/4 Cup Sugar

3 Tbl. Cocoa

3 Tbl. Instant Coffee

2 Tbl. Cognac

1 Tbl. Rum Extract

1 Stick Butter

4 Tbl. Sugar

Whipping Cream:

2 Pints Whipping Cream

4 Tbl. Sugar


Chocolate Shavings


Whip egg whites, add sugar and lemon during the last minute of whipping.

Mix egg yolks.

Alternating, add yolks and flour to the egg whites.

Bake at 350 about 20-25 minutes. (a toothpick inserted in the center of the cake will come out either clean or with only a few crumbs clinging to it).


In the meantime, mix the water, sugar, cocoa and instant coffee in a sauce pan, bring to a boil. Remove from the heat, add cognac and rum. Add butter and mix until dissolves.

Whipping cream:

Whip the cream to a stiff meringue, add sugar during last minute of whipping.


Cut the cake horizontally to create two layers. Set one layer aside.

Cut the second layer to 1" pieces.

Drop the cake pieces into the cocoa mixture and mix to coat the cake pieces with the cocoa mixture.

Arrange on top of the first layer.

Top the cake with the whipped cream.

Garnish with chocolate shavings.
