Chicken Thighs w/ Sweet Potato

10 thighs, skin removed

3 sweet potatoes or yams

 

Marinade:

3 tbl olive oil

3 teas. mustard, dijon

2 cloves garlic, minced

1 tbl thyme

salt, pepper

3 tbl honey

 

Topping:

¼ cup honey

¼ cup olive oil

 

A day ahead, combine marinate ing. in a plastic bag. Add chicken and marinate refrigerated over night.

Next day, arrange chicken and yams in a baking pan, pour marinate liquid on top and bake in 400 degrees for half an hour, until golden.

Pour honey and olive oil on top, and bake additional 20 minutes until chicken and yams are ready.

Sprinkle with coarse salt, pepper and thyme.
