Chicken Thighs w/ Cherries

6 boneless skinless chicken thighs

1 large onion, diced

1/4 cup bread crumbs

Cajun seasoning

salt

pepper

2 tablespoons olive oil

1 can dark pitted cherries

splash of soy sauce

splash of red wine (optional)

squeeze of lemon

dry apricot, optional

drench thigh in the breadcrumbs

In a skillet with olive oil, brown lightly (2 minutes on each side).

Remove from skillet and place in a dutch oven (or another oven-proof pot).

saute chopped onion in the same skillet. place on top of the chicken.

Add cajun seasoning, salt and pepper.

Add the cherries with their syrup, soy sauce and wine. May add optional dry apricot

bake in a 350F oven for 1 hour, covered.

remove the cover and continue to bake 30 minutes longer.

drizzle with lemon juice before serving
