Chicken w/  Prunes

Chicken piece (I like bone-in thighs or leg quarters)

Sauce:

3 tablespoons olive oil

2 tablespoons silan or honey

4 cloves garlic, crushed

10-15 prunes

1/2 teaspoon baharat*

salt

pepper

thyme

potatoes, cubed - optional

sweet potatoes, cubed - optional

​

* may be replaced with cinnamon and/or nutmeg

In a bowl combine all sauce ingredients.

 

Place chicken pieces, skin side down in a baking pan, pour the sauce over the chicken, make sure it touches both sides of each piece.

​

Cover pan with foil.

Bake in 400f for 30 minutes, remove foil, turn chicken pieces so skin is up, continue to bake uncovered for another 20 minutes.

​

If you add the vegetables, add them after you uncover the pan and continue to bake for a minimum of 20 minutes or more if the vegetables are not done yet.

 

Note: You may bake immediately, but may also prepare the night before and let marinate in the fridge overnight before baking the next day.
